100 pour Sang Côtes du Roussillon

GRAPES:
Selection of vines from a very old plot of Grenache.

This wine is vinified and aged in 500-litre oak barrels, which gives it its structure and elegance.
The harvest is manual with yields that do not exceed 15 hectoliters per hectare (which is very low).
Production available: 300 to 450 bottles per vintage (currently 2015)

TERROIR:
At an altitude of 100 to 200 meters, the shallow clay-limestone hillsides, where these magnificent grapes are harvested, face south and take full advantage of the benefits of the generous sun. The Tramontane dispenses its protective breath on the vine.

HARVEST AND VINIFICATION:
A selection of vines is made during the manual harvest. The manual destemming is done on a very fresh harvest and the grapes are put in a barrel of 500 liters in Allier oak of several wines (no new wood).
A cold pre-fermentation extraction is done for 3 to 5 days. The alcoholic fermentation is done on native yeasts and without added sulphites.
Light regular pumping over allows a soft and silky extraction.

ADVICE FROM THE WINEGROWER:
The deep garnet color of this wine is a real pleasure to transfer it to a carafe one hour before serving it.
This wine should be served at a normal temperature (16/18°C).
In its aromas, you will find the scrubland that surrounds the vineyard. Spices and white pepper will come to mingle. Aromas of red fruits make it even more seductive.
The passage in barrel brings the subtlety of vanilla and a slight toasted presence. This wine will go perfectly with your grilled meat dishes, in sauces or spiced.
