100% Pinot Noir
Said "de saigné", where the pinot noir is fully expressed.
It is made from selected biodynamic grapes: the sweetest of each harvest.
Color: salmon pink.
Subtle balance between the structure of Pinot Noir and the aromas of red fruits and candied fruits. It has a remarkable finish, full of finesse.
When to drink ?
When fully ripe, it surprises both as an aperitif and during a meal with smoked salmon, prawns, lobster, lobster or very low sugar fruit pies.
How to serve it?
It is recommended to serve this Champagne at a temperature of 8° to 10° to start and to let it rise in temperature to feel all the aromas while swirling the wine in the glass.
For this it is desirable to have flutes quite flared at the base which close above.
