GRAPES:
50% Muscat of Alexandria, 50% Muscat small grains,
Grapes certified in BIODYNAMICS by DEMETER
The qualitative will imposes us yields lower than 22Hl/ha. Production available: 6,000 bottles per vintage.

 

TERROIR:
The shallow clay-limestone slopes, with a schistous subsoil, are at an altitude of 100m to 200m. The vines and their grapes are exposed due south and take full advantage of the benefits of a generous sun and a wind which guarantee us a healthy harvest.

 

HARVEST AND VINIFICATION:
The harvest is carried out by hand, in 10 kg crates, which are put in a cold room for 24 hours. This is followed by direct pressing, cold settling and low-temperature fermentation with stirring on fine lees. The two grape varieties are harvested and vinified separately with different maturities in order to bring roundness and freshness.
Fermentation is stopped by mutage (addition of 7% pure alcohol) and the residual sugars are around 115g.

 

ADVICE FROM THE WINEGROWER:
This Muscat de Rivesaltes is a dynamic and generous wine with a very nice balance between sugar, alcohol and fruit aromas. Not thick, very silky and with a nice finesse. Let yourself be seduced by the exotic and captivating aromas of vanilla, citrus fruits and flowers. Discover its fruity and subtle scents and finish with mixed anise and honey.
As an aperitif, serve it very chilled (6 to 8°C): your virgin palate in the morning will appreciate this aromatic explosion when you warm it up in your mouth.
For the daring, try it with fresh goat cheese on toasted wholemeal bread.
You can also taste it with a blue cheese, such as Roquefort.
More classic on a dessert, it will go well with a fresh fruit salad, an exotic fruit sorbet (always serve chilled between 8 to 10°C).
The ultimate: with chocolate fondant or macaroons.
