GRAPES:
Majority of Grenache Noir, then Syrah and Mouvèdre
This wine is vinified and aged in 500-litre stainless steel vats, which gives it its structure and elegance. The harvest is manual with yields that do not exceed 20 hectoliters per hectare.
Production available: 6000 bottles per vintage (currently 2017)

TERROIR:
At an altitude of 100 to 200 meters, the shallow clay-limestone hillsides, where these magnificent grapes are harvested, face south and take full advantage of the benefits of the generous sun. The Tramontane dispenses its protective breath on the vine.

HARVEST AND VINIFICATION:
A selection of old plots is made during the manual harvest. Destemming is done on a very fresh harvest and the grapes are put in a 500 liter stainless steel tank.
A cold pre-fermentation extraction is done for 3 to 5 days. The alcoholic fermentation is done on native yeasts and without added sulphites.
Light regular pumping over allows a soft and silky extraction.

ADVICE FROM THE WINEGROWER:
The deep garnet color of this wine gives a real pleasure to transfer it into a decanter 15 minutes before serving it.
This wine should be served at a normal temperature (16/18°C).
In its aromas, you will find the scrubland that surrounds the vineyard. Spices and white pepper will come to mingle. Aromas of red fruits make it even more seductive.
This wine will go perfectly with your grilled meat dishes, in sauces or spiced.
