GRAPES:
Grenache gris: the oldest parcel of the Domaine (nearly a hundred years old).
We have selected the plots on hillsides, on old vines and the yields
do not exceed 12 hl per hectare.
Production available: 2,000 bottles per vintage
TERROIR:
Dona Lisa white is made with 100% Grenache Gris from the oldest plot in the
MAS DELMAS which is located at the foot of the Corbières maritimes. South / south-east exposure,
a low altitude and clay-limestone soil are the major components.
HARVEST AND VINIFICATION:
A selective and rigorous sorting is carried out during the manual harvest. The precise moment of the harvest is
determined to obtain a fat, ripe and lively wine at the same time. The manual harvest is kept
for 24 hours in the cold to have a high quality pre-fermentation extraction. Fermentation
alcoholic is done partly in vats on fine lees at low temperature controlled with stirring
soft and regular and partly in aged Allier oak barrels.
This is followed by aging in oak barrels on lees with regular stirring. All of the wine is aged
in Allier oak barrels.
ADVICE FROM THE WINEGROWER:
Dona Lisa 2014 has a beautiful light gold color, with a complex nose, delicately scented, with new honey,
with hazelnut, fresh butter, white plum with a grenache flavor. The mouth is
greedy, ample and warm, with fat. We find the same aromas as on the nose, with a
iodine, fennel and peppery flavor on the finish.
To be reserved for exceptional gastronomic moments between lovers of local wines to accompany
a leg of monkfish with smoked bacon, calamari a la planxa, white meats, a platter
of cheeses, a land-sea dish or grilled fish.
