GRAPES:
Grenache, Mourvèdre, and Syrah.
Syrah matured in oak barrels gives this wine its structure and elegance.
Grenache and Mourvèdre bring the seductive fruitiness.
We have selected plots on hillsides, on old vines and the yields do not exceed 15 to 18 hectoliters per hectare (which is very low).
Production available: 3 to 5,000 bottles per vintage
TERROIR:
At an altitude of 100 to 200 meters, the shallow clay-limestone hillsides, where these magnificent grapes are harvested, face south and take full advantage of the benefits of the generous sun. The Tramontane dispenses its protective breath on the vine.
HARVEST AND VINIFICATION:
A selective and rigorous sorting is carried out during the manual harvest. Destemming and crushing follow. For the Grenache and Mourvèdre grape varieties, this is followed by a 21-day vatting with two daily punching down of the wines in order to obtain maximum extraction of the fruitiness. To soften the tannins of the Syrah, a passage in barrels for 12 months develops its spicy side as well as a sensual presence of vanilla.
The assembly of this wine can then be done. The result is the "M" Delmas, a Feminine and Masculine wine at the same time.
ADVICE FROM THE WINEGROWER:
The deep garnet color of this wine is a real pleasure to transfer it to a carafe one hour before serving it. The glow of the candle will bring out its magnificent reflections.
This wine should be served at room temperature (18°C).
In its aromas, you will find the scrubland that surrounds the vineyard. Spices and white pepper will come to mingle. Aromas of red fruits make it even more seductive. The passage in barrel brings the subtlety of vanilla and a slight toasted presence. This wine will go perfectly with your grilled meat dishes, in sauces or spiced.
